White Pine Touring, based down the road in Park City, Utah, offers Moonlight Snowshoe Dinner Hikes every Wednesday and Thursday night. Tours leave from the midmountain Empire Canyon Lodge at 6 p.m. for a one-hour trek over the trails behind the grand 3-year-old lodge. A three-course dinner commences at 7 p.m. at Empire Canyon, with each course prepared inside one of the lodge’s cavernous fireplaces. At the Empire fireplace, try raclette and cured Italian and Swiss meats and baguettes; at the North fireplace, sample veal and mushroom stew served with rosti; finish up at the Ontario fireplace with caramel and chocolate fondue and fresh fruit. Leave the snowshoes at the door on your way out, though. Your ride back to the village-or Park City-is waiting in the parking lot. $25 for the snowshoe tour, including rentals; 435-649-6249.
