Wild Sage

Intimate is the name of the game at this award-winning restaurant.
Wild Sage

The recipient of a number of national awards, Wild Sage is a spot where intimate is the name of the game. The rustic river rock fireplace sets an elegant mood for the whole meal while the open kitchen makes you feel like you are in the personal home of a star chef. The restaurant only has six or seven tables, so make a reservation. It’s likely you will wait for your table, even with a reservation since everything moves slowly at Wild Sage. This meal is meant to be enjoyed at a slow pace, so start with a bottle of wine from Wild Sage’s fantastic wine list. After watching the kitchen tick over a few glasses, check out the innovative menu that takes full advantage of seasonal produce. The fish, beef, and game dishes are particularly good. Try the ancho chili-rubbed beef tenderloin, Texas-style stuffed quail, or pan-seared halibut with pesto risotto. Even though the entrees are the stars of the menu, split one of their desserts between two people. Anything with chocolate is great.

The Wildflower, Vail

The Wildflower

Despite the extravagant floral arrangements that grace his restaurant, you wont find executive chef Justin Kalaluhi holding court at a garden party. Favorites include a cote de boeuf for two that’s carved right at the table and newly added gluten free items.
