BUY THE RIGHT BOARDS
No matter how hard you try to avoid it, if you ski enough, you're guaranteed to have a run-in with breakable crust. Increase your odds of cruising through it by skiing wider boards (80 mm at the waist and up) with less sidecut.
Crust isn't uniform. Sometimes you'll stay on top; sometimes you'll break through. Experimenting is key. Can you glide over it if you distribute your weight more evenly on both skis? If not, you'll need to ski more aggressively, relying on power, rather than finesse.
ADAPT YOUR STYLE
By the time you're in the arc of the turn, you have to know whether you're going to break through. If you're punching through each time, use a short jump turn with quick direction changes. If your breakthroughs are sporadic, try a light, super-round turn.
BRING IT ON
Breakable crust constantly challenges your balance. Keep your skis together fore and aft, and use a low, wide stance, flexing at the ankles and knees. And keep it to slow to moderate speeds—unless you like taking diggers when conditions change.
